WHY PDO ?

The Regulation (EC) 510/2006 lays down the requisites for the protection of geographical indications and designations of origin for selected agricultural products and foodstuff, making sure they are allowed to be marked with the wording PDO (Protected Designation of Origin). Only a few products own this designation and, among them, since the 24th July, 2012, we also find the Squacquerone di Romagna PDO!
To obtain the PDO denomination, the Squacquerone has proved to follow the strict set of “Standardized production guidelines” regarding: description of the product, production area, origin, obtaining method, link with environment, controls and labelling.
Moreover, the Squacquerone di Romagna PDO can only be Made in Italy (or perhaps we’d better say “Made in Emilia-Romagna”), because it comes from cow’s milk of a well-defined area of the region, a territory showing specific and unique morphological and chemical-phisical properties, with the addition of local bacteria. Its preparation exclusively takes place at a few local dairies, six of which have joined in the Squacquerone di Romagna PDO association, which promotes the exclusiveness of this product.
